Galacto-oligosaccharide
(GOS) are galactose-containing oligosaccharides whose chemical structures
vary by chain length, branching, and glycosyl linkages. Depending on the
source of β-galactosidase, using lactose as a single substrate, the galactose
released during the enzymatic hydrolysis of lactose can be transferred to
another lactose molecule through β(1→6), β(1→4) or β(1→3) glycosidic linkage
to the galactose moiety. In general, Galacto-oligosaccharide (GOS) is a
